Amla Gatagat Recipe | Amla Candy Recipe | Gooseberry Candy

gatagat is a soft candy prepared with Indian gooseberries ingredients and quantities are listed in the description box here they are 250 grams amla/indian gooseberries, washed and wiped dry 250 grams gur/jaggery broken into small pieces boora/ground sugar as much as needed 1/2 tsp ground carom seeds 1/2 tsp ground peppercorns 1/2 tsp black salt 1/2 tsp sendha namak/rock salt. you can use table salt instead 1/4 tsp ginger powder 1/4 tsp asafoetida powder 1 tsp roasted cumin seed powder 1.5 tsp mango powder 1/2 lemon (not shown here) we will steam the amla first. if you do not have a steamer use a contraption like the one we are using put one liter of water in a pot and place a large colander over it put the amla in the colander and cover with a lid. keep heat on high. Steam them until they are soft, about 12-15 minutes while the amla is getting steamed put all the spices, salt, etc, except lemon juice and the ground sugar, in a large bowl, and stir until they combine well the spice mixture is ready. keep aside after 15 minutes of steaming the amla are soft. remove and allow to cool down after they have cooled separate the segments and discard the seeds now put them in a grinder and grind them fine without adding any water grind the amla on pulse mode a few seconds at a time and each time scrape the amla from the sides as well here is the amla ground to a fine paste. there is no need to add any water we will start making the soft amla candy now keep a pan on medium heat and put in the amla paste and stir cook for 2 minutes after 2 minutes put in the jaggery break the jaggery into smaller pieces to help it melt quickly. keep heat on medium-low keep stirring continuously until the jaggery melts keep adjusting the heat as needed the jaggery has melted completely,. reduce heat to low, put in the spice mixture, and stir until they combine nicely once the spices mix in nicely put in the lemon juice and mix again stir cook until the mixture thickens and comes together. keep heat on low after about 20 minutes the mixture has thickened and has also come together do not thicken it too much as it will thicken further when it cools down and the candy may become hard put off the heat and transfer it to a bowl and let it cool down completely the mixture has cooled down completely. dust your hands with the powdered sugar and make small candy balls from the mixture roll the candy balls in the powdered sugar and keep aside. finish off making all the candy balls in this way all the amla gatagat/soft candy is ready. let them dry for some time then store them in an airtight bottle do try these healthy and delicious amla candy and give your feedback the candy will keep good for a year if kept in the fridge if you like the recipe please share the video & subscribe to our channel and press the bell icon so you are notified about our new videos. thanks for watching
